Hopson's basket came shortly after a 3-pointer by long-range shooter Chandler Parsons had given Florida a 60-59 advantage.
The Volunteers rallied back from a 34-28 halftime deficit, with Hopson scoring 6 of his 10 points in the second stanza.
Wayne Chism led the victory with 16 points and 11 rebounds.
J.P. Prince scored 12 with 7 rebounds, Hopson added 4 rebounds and 3 assists, while Skylar McBee and Cameron Tatum sank key 3-pointers in the comeback for the Volunteers (16-4, 4-2), who stopped a 2-game skid.
Alex Tyus led Florida with 18 points and 7 rebounds.
Parsons scored 14 with 8 rebounds, and Erving Walker had 9 points, 3 rebounds, and 4 assists for the Gators (15-6, 4-3), who had won their last 4 games.
